INGREDIENTS

Serves 6 

Total cooking time - 2 1/2 hours (150 minutes)

Tip - This dish is so easy to freeze. I wouldn't freeze it with the pastry on top, I'd freeze only the meat and then defrost it overnight before either topping with fresh pastry to make a pie or to serve up with some vegetables.

 

  • Rump skirt - I used 1.2kg for this dish
  • 1 Large chopped white onion
  • Handful of sliced cherry tomatoes
  • 1 Large finely chopped garlic
  • Handful of finely sliced carrots
  • Big handful of sliced mushrooms
  • 1 Dessert spoon unsalted butter
  • 1 Sheet puff pastry - I purchased this one from Sainsburys
  • 2 Egg yolks
Tip - To turn into a green meal, just serve the meat with a handful of green vegetables like spinach and broccoli. The pastry makes this meal a treat/red dish.
