GREEN MEAL || VEGETABLE OMELETTE


INGREDIENTS

Serves 1

Cooking time - Less than 8 minutes

  • 2 Medium eggs - you can use large ones as well
  • Small handful of sliced mushrooms
  • Small handful of chopped spinach
  • 2 Dessert spoons chopped red onion
  • Small handful of mature or extra mature cheddar cheese - if you prefer a small handful of feta cheese instead of the cheddar cheese then that will also work
  • Optional - a handful of mixed salad leaves
Tip - This is a fantastic first meal of the day, it doesn't take long to cook, it's tasty and filling. The vegetables could be cooked the evening before, ready to be added into the omelette the next day. To save time, cook the vegetables in a separate small frying pan or saucepan than then omelette, it's ok to have a few pans on the go at the same time.
