GREEN MEAL || EGG AND BACON WITH SUNDRIED TOMATOES AND CHILLI


INGREDIENTS

Serves 1

  • 2 eggs
  • 2 strips unsmoked bacon
  • 1/2 avocado
  • handful of sliced mushrooms
  • 1/2 tsp chilli - I used a jar of Easy Chilli - optional
  • 1 dessert spoon finely chopped sundried tomatoes - optional

TIPS

  • Because the bacon is salty, I do not add salt to this meal
  • If I cook my eggs longer than 45 seconds, they become rubbery and remember, the moment I scoop them out of the pan onto the plate, they still continue cooking
  • Black pepper is also optional in this recipe but does add nice flavour
