Comforting Spicy Beef Stew
INGREDIENTS
Serves 2 - 3
- 3 Handfuls cubed beef (1kg)
- 2 Handfuls of cubed sweet potato
- 1 Sliced Red Pepper
- Handful of sliced courgette
- 1/3 cup red wine - optional but great for extra flavour
Seasoning
- Sea salt
- 1 Dessert spoon mild or hot chilli powder
- 1 dessert spoon garlic powder or 2 chopped garlic cloves
- 1 dessert spoon sage
- 1 dessert spoon black pepper
LETS GET COOKING!
- Place a large casserole dish over a high heat and add in unsalted butter or coconut oil. Once the butter/coconut oil has melted, add in the beef and all the seasoning, expect the chilli powder.
- Fry for 10 minutes and stir every minute
- Now turn the heat down to medium, add in the chilli powder and continue frying for another 6 minutes
- Add in the wine or replace with water and stir well. Place the lid on top and cook for 10 minutes. Tip - always have a look every now and again to make sure that their is some liquid/sauce in the dish otherwise the meat will burn and it will go dry.
- Add the sweet potato in, give a good stir and then add in some boiled water. Don't cover the ingredients completely with water, we want a sauce but this is not a beef soup. Place the lid on top again and cook for 20 minutes and turn the heat to low.
- Time to add in the red pepper and courgette, give a good stir and continue cooking for 10 more minutes.
TIP - always make sure you add some boiling water to keep the dish from drying out, there needs to be a sauce
Stir every now and again and season if lacking in flavour
I remove some meat after 50 minutes to taste and make sure it's tender/soft
The longer and slower you cook it, the softer the meat will become
