Sea Bass With Sweet Potato


 

INGREDIENTS 

Serves 1

  • 2 small or 1 large seabass fillet (skin on)
  • Handful of sweet potato
  • Handful of spinach 
  • Handful of feta cheese 
  • Salt & Pepper 
  • 1/2 a lemon
  • 1 crushed garlic clove
  • Unsalted butter


LETS GET COOKING!

  1. Cube the sweet potato and cook for 25 mins on 180 degrees for 25 mins (or until cooked). Once cooked, take out of the oven and leave in a bowl until you are ready to serve
  2. Melt a large knob of butter in a pan on a medium heat 
  3. Add the seabass (skin side down) into the pan, season with the salt & pepper, add the garlic and squeeze over the lemon.  Cook for 3-4 mins (reduce the time if the fillets are thin)
  4. Gently turn the fillets and cook for another minute, gently basting the fish with the butter
  5. You are now ready to serve
