GREEN DISH || PORK AND LEEK SAUSAGE DISH || HEYJQ JUNIORS
INGREDIENTS

Tip - All videos are used to show the process of creating these delicious meals but doesn't always match the exact ingredients I will list.
- Handful in total of sliced white and red onion rings, mixed together
- Handful of sliced cherry tomatoes
- Handful of sliced mushrooms
- 1 Finely chopped garlic clove
- Season with salt and black pepper
- 4 Pork and leek sausages or just 4 plain sausages - in the video I use pork and leek sausages, you can use whichever flavour you prefer
- Handful of chopped spinach
- 2 Slices of seeded sourdough bread - this turns the meal into an orange meal and it's optional to add in
- Place a large frying pan on a medium heat and add in unsalted butter or coconut oil. Once melted, add in the the onion rings and fry for 4 -5 minutes until soft and then remove from the pan, place in a bowl on the side. Stir frequently.
- Add the tomatoes, mushrooms and garlic into the same pan, season with salt and black pepper and fry for about 8 minutes until soft. Once it's soft and the mushrooms turned brown, remove from the pan and add into the bowl with the onion rings. Stir frequently.
- Again using the same pan, add in the sausages and fry for 10 - 12 minutes till brown on a medium heat. Once the sausages are cooked, add back in all the other ingredients that was placed in a bowl on the side.
- Turn the heat down to low, mix all the ingredients together. Add in the spinach and cook the dish for another 2 minutes and then you are ready to serve up.
Tip - Always cut open at least 1 sausage towards the end of cooking to make sure it has cooked through. Always stir the ingredients in the pan frequently to make sure nothing burns. In the video I add in extra virgin olive oil and unsalted butter to cook with. The butter creates amazing flavour.
