Parmesan Potato Stack


INGREDIENTS 

Serves 1

  • 10 thin slices of potato ( 5 x sweet potato & 5 x white potato) you could just use sweet potato
  • 2 dessert spoon finely grated parmesan cheese 
  • 1 finely chopped garlic clove 
  • 1/2 tsp of thyme 
  • 2 dessert spoons of melted butter
  • Salt & pepper to season 

 

LET'S GET COOKING!

  1. Preheat your oven to 160 degrees
  2. Grease a muffin tin with butter 
  3. Mix all the ingredients in a bowl together 
  4. Evenly stack your potatoes and place in the middle of the oven for 50 mins

TIP: Let the potatoes cool before eating, as this creates a better flavour
