ORANGE DISH || BURGERS || DOUBLE HALLOUMI CHEESE BURGER

- 4 Thick slices of halloumi cheese - each as thick as the width of a pencil - cut along the length of the halloumi to create long slices
- 1 Pumpkin seed roll or seeded roll - pumpkin seed roll I buy in Co Op - the roll can also be replaced by 1 slice of seeded sourdough bread
- 1 Small or 1/2 big avocado
- Small handful of salad leaves - optional
- 1 Fried egg - poached egg will also work
- 1/4 Fresh lemon
- Place a small pan over a medium heat and add in 1 tsp of unsalted butter or coconut oil, once melted add in the halloumi cheese. Fry for 1 minute on each side for a total of 5 - 6 minutes until light golden brown. If you prefer it more crispy, cook for a bit longer. Afterwards place on a plate and let it cool down for the best flavour.
- Whilst the halloumi is cooking, add the avocado into a bowl and mash with a fork. Season with salt, black pepper and lemon juice for amazing flavour.
- As soon as the halloumi is cooked, add 1 tsp unsalted butter or coconut oil into the same frying pan. Once melted, break in the egg and fry for 2 minutes on a medium heat. After 2 minutes, turn off the heat and then turn the egg over in the pan to cook the other side for 20 seconds. The yolk will still be soft and runny, if you want it hard, cook for at least 1 minute.
- You are now ready to serve up. First place the salad leaves on the roll, then top with 2 halloumi strips, the avocado, the other 2 halloumi strips and finally place the egg on top.
