
JQ Smoky Chilli Beans On Toast
INGREDIENTS
Serves 2
- 3 Slices of diced Bacon or Pancetta
- 1 Chopped Red Onion
- 1 Chopped Red Pepper
- 1 Crushed Garlic clove
- 1 Tsp of Unsalted Butter
- 1 Chopped Chilli or a Tsp of Chilli paste
- 1 Dessert spoon of Smoked Paprika
- 2 Handfuls of chopped Tomatoes
- 2 Large dessert spoons of Tomato Puree
- 1 400g tin of organic Haricot Beans
- 2 small slices of seeded Sourdough (optional)
- 2 Eggs
- Olive Oil
- Salt & Pepper
LETS GET COOKING!
- Fry the bacon in the oil for a few minutes on medium heat until they start to turn golden (you'll need a medium size frying pan)
- Add in the onions and fry for a further 2 minutes, and then add in the red pepper
- Add in the butter, once melted, add the garlic and chilli and fry for 2 mins
- Now add the tomatoes and reduce the heat slightly to allow the tomatoes to simmer (approx. 4-5 mins). As the tomatoes start to soften, squash them down with back of your spoon
- Add the tomato puree and a splash of water at the point (if needed) to loosen the sauce, and finally add the beans
- Let the beans simmer gently for another 3-5 mins until piping hot
- Toast your bread, whist frying your eggs (in unsalted butter)
- Now assemble the elements of the dish
