JQ Smoky Chilli Beans On Toast


INGREDIENTS  

Serves 2 

  • 3 Slices of diced Bacon or Pancetta
  • 1 Chopped Red Onion
  • 1 Chopped Red Pepper 
  • 1 Crushed Garlic clove 
  • 1 Tsp of Unsalted Butter 
  • 1 Chopped Chilli or a Tsp of Chilli paste 
  • 1 Dessert spoon of Smoked Paprika 
  • 2 Handfuls of chopped Tomatoes 
  • 2 Large dessert spoons of Tomato Puree 
  • 1 400g tin of organic Haricot Beans 
  • 2 small slices of seeded Sourdough (optional)
  • 2 Eggs
  • Olive Oil
  • Salt & Pepper 


LETS GET COOKING!

  1. Fry the bacon in the oil for a few minutes on medium heat until they start to turn golden (you'll need a medium size frying pan)
  2. Add in the onions and fry for a further 2 minutes, and then add in the red pepper
  3. Add in the butter, once melted, add the garlic and chilli and fry for 2 mins
  4. Now add the tomatoes and reduce the heat slightly to allow the tomatoes to simmer (approx.  4-5 mins). As the tomatoes start to soften, squash them down with back of your spoon 
  5. Add the tomato puree and a splash of water at the point (if needed) to loosen the sauce, and finally add the beans
  6. Let the beans simmer gently for another 3-5 mins until piping hot
  7. Toast your bread, whist frying your eggs (in unsalted butter)
  8. Now assemble the elements of the dish
