
Jacket Sweet Potato Topped With Smoked Mackerel & Tuna
INGREDIENTS
SERVES 1
- Medium size Sweet Potato - bake in oven for 1 hour until soft
TOPPING
- 1 Smoked Mackerel Fillet - remove the skin
- 1/2 Tin tuna - best in olive oil or spring water
- 1 Dessert spoon Mayonnaise
- 1 Tsp Wholegrain Mustard
- 2 Sliced Cherry Tomatoes
- 3 Sliced Pickled Onions
- 1 Dessert spoon of the Pickled Onion sauce from the jar
- 1 Small handful of crispy Salad Leaves
- 1 Dessert spoon chopped Spring Onion - sprinkle over the top
LETS GET COOKING!
- After baking the sweet potato, mix all of the topping ingredients together in a bowl and place on top of the sweet potato
- Poke some little holes on top of the sweet potato with a fork before baking and drizzle over olive oil
