
GREEN DISH || SEAFOOD - Prawns with sweet potato and Avocado
INGREDIENTS
Serves 1
- Handful of raw king prawns
- Tsp of ground ginger
- 2-3 Dessert spoons olive oil
- 1 Tsp of finely chopped red chilli - remove seeds if you don't like it too hot
- 1/2 Finely chopped garlic clove
- 1 Dessert spoon of unsalted butter - make sure it's soft so it will mix well with ingredients
- 1/2 Or 1 small avocado - mash it
- 1/2 Small fresh lemon
- 3 Broccoli stems - cut in 1/2 down the length of each one
- Small handful of cubed sweet potato - fry in unsalted butter for 10 minutes on a medium heat till golden brown - this ingredient isn't included in the video but I do explain how I cooked it
