
Cod Topped With Sultana Relish
INGREDIENTS
Serves 1
Fish
- 1 big handful of cod fillet
- 1/2 a fresh lemon
- 1 clove of garlic
- Salt & Pepper
- Unsalted butter
Relish
- 1 dessert spoon of sultanas
- 1 dessert spoon of finely chopped celery
- A handful of chopped spinach
- 5 sliced green olives (optional, but good for flavour)
- 1 tsp of honey
- 2 dessert spoons of olive oil (extra virgin is the best)
- 1 dessert spoon of toasted pine nuts (dry roast for 2 mins on a high heat, tuning frequently
LETS GET COOKING!
- Heat a large knob of butter in a pan on a low-medium heat until melted
- Gently add the cod to the pan (skin down first if you are using cod with the skin on). Season with the salt & pepper, add the garlic clove and squeeze the juice of the lemon over the fish
- Cook for 8 mins (this fish will start to fall apart, so treat gently)
- Mix all the relish ingredients in a bowl together
- You are now ready to serve
