GREEN/RED DISH || Cod Topped With Sultana Relish


Serves 1 

Tip - Remove sultanas to make this a green dish


  • 1 big handful of cod fillet 
  • 1/2 a fresh lemon
  • 1 clove of garlic
  • Salt & Pepper
  • Unsalted butter 


  • 1 dessert spoon of sultanas
  • 1 dessert spoon of finely chopped celery 
  • A handful of chopped spinach 
  • 5 sliced green olives (optional, but good for flavour)
  • 1 tsp of honey
  • 2 dessert spoons of olive oil (extra virgin is the best)
  • 1 dessert spoon of toasted pine nuts (dry roast for 2 mins on a high heat, tuning frequently 



  1. Heat a large knob of butter in a pan on a low-medium heat until melted
  2. Gently add the cod to the pan (skin down first if you are using cod with the skin on). Season with the salt & pepper, add the garlic clove and squeeze the juice of the lemon over the fish
  3. Cook for 8 mins (this fish will start to fall apart, so treat gently)
  4. Mix all the relish ingredients in a bowl together
  5. You are now ready to serve
