ORANGE DISH || Butternut with Cream Cheese and Spinach


Serves 2

  • 1 Medium size butternut squash - cut in 1/2 along the length of the butternut
  • Handful of chopped spinach
  • 1 Dessert spoon cream cheese
  • Handful of flaked mozzarella cheese
  • Handful of grated red leicester or extra mature cheddar cheese


1. Pre heat oven on 180 degrees celcius for 5 minutes.

2. After cutting the butternut in half, remove all the seeds with a spoon and then place each half in an oven dish, skin side down. Drizzle over plenty of oil and season with salt and black pepper. Place in the oven and cook for 45 min and then turn over both pieces. Cook for another 15 - 20 minutes. Cut into the butternut with a knife to check if it's soft. If not, then place back in the oven until soft all the way through.

3. Add the spinach, the cream cheese, the mozzarella cheese and the red leicester cheese into a bowl and mix everything together for minute with a fork or spoon.

4. Remove the butternut dish from the oven and then top each half of the butternut with the cream spinach mixture. Spread it all out over each half.

5. Place the butternut dish under a grill for 5 - 6 minutes until all the toppings have melted and then you are ready to serve up.

Tip - This dish goes really well with any meat.
