INGREDIENTS

Serves 1

  • Handful of beef mince (12% fatty mince works well) - make into 2 beef patties
  • 1/2 Whisked egg - whisk with a fork for 30 seconds in a small bowl
  • 1/2 White onion cut into thin onion rings
  • Handful of chopped white cabbage
  • 3/4 Handful of grated carrot
  • 1 Dessert spoon mayonnaise
  • 2 Strips streaky bacon
  • 1 Pumpkin seed roll - this is the best one from the CO OP shop - if you can't get this one, go for seeded or wholemeal roll

 LET'S GET COOKING

1. Place all the mince in a bowl and add in 1/2 a whisked egg. Mix everything together for a minute until the mince starts to get a bit firm.

2. Scoop out 1/2 the mince with one hand and then gently roll it between both your palms for a few seconds and then squash down with your palms to create a very flat patty. This is called a smashed burger.

3. Place a medium frying pan on a high heat and add in a small amount of extra virgin olive oil. After 1 minute add in the 2 burger patties and season with salt and black pepper. Don't add too much salt because the bacon is already salty. Turn the burgers over every 2 minutes, after 5 minutes of total cooking time, add in 1 tsp of unsalted butter to add more flavour. I like a medium rare burger and this takes 5 - 6 minutes. Tip - You can always cut open a bit of the burger to see if it's cooked to your liking.

4. Cook the bacon for 4 minutes alongside the burger patties in the same pan. Turn them over every minute. You can cook them separately if you prefer doing it that way.

5. Place a small frying pan over a medium heat and add in a small amount of unsalted butter or coconut oil. Once melted, add in the onion rings and fry for about 4 - 5 minutes until soft. I do this step when the burgers are nearly cooked. I don't like adding my onions into the same pan as the burgers, I don't want all my ingredients to taste of meat.

6. Add the white cabbage and carrots into a bowl and then mix in the mayonnaise. Mix together for about 30 seconds.

7. Let's serve up. I spread some unsalted butter onto the roll first, then top it in the following order, first the bacon, then the burger patty, next the onion rings and finally the coleslaw goes on the top.

Have fun with this super tasty meal.

Tip - For better results, remove the rolls. Having bread everyday might hold back results.
