Baked peaches with cinnamon and whipped cream


Serves 1

  • 1 Whole peach sliced in 1/2 - remove the stone
  • 1 Dessert spoon pistachio nuts - optional
  • 2 Dessert spoons natural greek yoghurt
  • 1/3 Cup double cream - make sure it's cold - use electric whisk when making whipped cream
  • 4 Dessert spoons ground cinnamon
  • 3 Dessert spoons of runny honey


1. Pre heat oven on 180 degrees celcius for 5 minutes.

2. Place the peaches in an oven dish, skin side down first. Top each 1/2 with half a tsp of unsalted butter, sprinkle 1 tsp of cinnamon over each peach and then drizzle over a tsp of honey over each half.

3. Now place the oven dish in the oven for 20 minutes. Turn the peaches over after 20 minutes and move around in the oven dish for a few seconds so it mixes with the sticky sauce in the dish. Bake for another 5 minutes until completely soft. Test the softness with a knife, if it easily cuts into the peaches then they are done, otherwise keep on baking them till soft.

4. Five minutes before the peaches are completely done, add the double cream into a bowl, make sure the cream is cold. Whisk with an electric hand whisk till the cream thickens. Once you're happy with the thickness, you can serve it up with the peaches. Normally it takes about 4 minutes for the cream to turn into whipped cream, don't overdo it. I tilt the bowl slightly, this makes it easier to whisk the cream because there's not that much in the bowl. Tip - If the cream is really cold then it will thicken fast, if it's warm it takes ages.

5. Serve up. First spread the greek yoghurt out in your bowl. Now top with the peaches and make sure all the sauce from the oven dish gets drizzled over as well. Top with the whipped cream, pistachio nuts and finally sprinkle over the leftover cinnamon and drizzle over the honey.
