
King Prawn Curry
INGREDIENTS
Serves 2
- 2 handfuls of raw king prawns
Marinade for the Prawns
- 1 dessert spoon of ground coriander
- 1 dessert spoon of turmeric
- 1 dessert spoon of cumin
- 1 heaped dessert spoon of greek yogurt
- 1 grated garlic clove
- 1/2 a chopped white onion
- Pinch of sea salt
- 1/2 a lime
Satay Sauce
- 2 dessert spoons of peanut butter
- 1 dessert spoon of honey
- 2 dessert spoons of greek yogurt
- 1/2 cup of double cream
- 1/2 cup of full-fat milk
LET'S GET COOKING!
- Mix all the marinade ingredients and prawns together in a bowl, and place in the fridge for 30 minutes
- Place a small saucepan over a low heat, and after a couple of minutes add in all the satay sauce ingredients, gently stirring every minute for 8 minutes until the sauce has thickened. Turn off the heat and leave in the saucepan
- Place a frying pan over a medium heat and drizzle in a little olive oil
- After a couple of minutes add the chopped onion to the pan and fry for 4 minutes, stirring frequently
- Now add the marinated prawns in with the onions and cook for 5 mins, stirring frequently
- Turn down the heat to low and add in the satay sauce
- Simmer for 6 min and then you are ready to serve
