
Sea Bass With Sweet Potato
INGREDIENTS
Serves 1
- 2 small or 1 large seabass fillet (skin on)
- Handful of sweet potato
- Handful of spinach
- Handful of feta cheese
- Salt & Pepper
- 1/2 a lemon
- 1 crushed garlic clove
- Unsalted butter
LETS GET COOKING!
- Cube the sweet potato and cook for 25 mins on 180 degrees for 25 mins (or until cooked). Once cooked, take out of the oven and leave in a bowl until you are ready to serve
- Melt a large knob of butter in a pan on a medium heat
- Add the seabass (skin side down) into the pan, season with the salt & pepper, add the garlic and squeeze over the lemon. Cook for 3-4 mins (reduce the time if the fillets are thin)
- Gently turn the fillets and cook for another minute, gently basting the fish with the butter
- You are now ready to serve
