
Parmesan Potato Stack
INGREDIENTS
Serves 1
- 10 thin slices of potato ( 5 x sweet potato & 5 x white potato) you could just use sweet potato
- 2 dessert spoon finely grated parmesan cheese
- 1 finely chopped garlic clove
- 1/2 tsp of thyme
- 2 dessert spoons of melted butter
- Salt & pepper to season
LET'S GET COOKING!
- Preheat your oven to 160 degrees
- Grease a muffin tin with butter
- Mix all the ingredients in a bowl together
- Evenly stack your potatoes and place in the middle of the oven for 50 mins
TIP: Let the potatoes cool before eating, as this creates a better flavour
